It is my third fall with Creamy Toscano Cheese Dusted with Cinnamon . In 2010 I was absolutely in love with the cheese. I was amazed that salty cheese and sweet cinnamon make such a great combination of flavors. Last year the cheese texture seem to be too dry. This is a very strange cheese: it’s a quite hard crumbly cheese and inside it is very moist. Just take a look at the photo below… Isn’t that amazing? This moisture comes from “occasionally, well-placed” salt crystals.
